Hi, I'm Lindsay Weiss from the our site Blog. So my kids love those packets of rice you buy at the grocery store. I figured out a way to make that kind of rice at home, but in a much healthier way, tastes exactly the same. Let's get started.
The ingredients you'll need for this recipe are uncooked brown rice – and make sure it's not instant rice. Regular brown rice. Some chopped broccoli, butter, shredded cheddar cheese, onions, some olive oil, and some chicken broth.
To start our rice, I have some olive oil heating over medium heat. I'm going to add our chopped onion and get that sautéing for just a couple minutes until tender. So once your onions are nice and soft, you're going to go ahead and add the uncooked brown rice right to the pan and stir it right in. And this just really kind of crisps that rice and gives it really good flavor.
Once your rice has sautéed for another couple of minutes, you're going to add your chicken broth. Stir that up nicely. I have just a little more to add. And you're going to bring this chicken broth to a simmer. And once you see those little bubbles right around the outer edge, you can see them starting to form now, you'll go ahead and turn your heat down, turn it down to low. Cover your pot. Let it go for about 30 to 40 minutes. Check it once, you're looking for your rice to be tender and all the liquid to be absorbed.
So once your rice is around the 30 to 40 minute mark, give it a good check. And this looks perfect. The rice is nice and tender, all the liquid is absorbed. So the next thing you're going to do is take your chopped broccoli and stir it right in. And you know, if your kids aren't broccoli fans, mine happen to be, carrots would work, peas, corn, any veggie your kids actually really like with their rice would work perfectly right here.
And just stir it in and you're going to cook this right at the same temperature for another five minutes or so, just to tenderize that broccoli just a little bit so it's not quite so crunchy.
So once your broccoli is nice and tender, you're going to go ahead and turn the heat off and remove it from the burner over to one that doesn't have heat. And you're going to stir in your last two ingredients, which is the butter and some yummy shredded cheese. Just give those a good stir.
And it'll take a minute or two, but they will melt up beautifully and you will have perfect cheesy rice.
